Takashi is the owner and head chef of Miyazaki,one of the most talked about restaurants of the year. His unassuming takeaway has been praised by critics and fellow chefs for using authentic Japanese elements with great Irish produce. Takashi will judge our Street Food Awards Final and present a seaweed tasting and demo: Cold soba noodle dish with Kombu(Irish) cured fish, Dublin bay prawn or Irish oyster using his theory of cuisine with local ingredients.
